Potato & Peas Salad

Ingredients

For Salad

2 cups baby potatoes with skin
½ cup boiled green peas
1 cup lettuce leaves, torn into pieces
Salt to taste

For the low fat curds dressing

¼ cup fresh low fat curds (dahi)
2 teaspoons chopped dill (shepu / suva)
A dash of chopped green chillies
2 tablespoons low fat milk
Salt to taste

For the low fat curds dressing

1. Tie the low fat curds in a thin muslin cloth. Hang for 1 hour and allow the water to drain out.
2. Put the hung curds in a bowl and whisk thoroughly to remove all lumps.
3. Add all the remaining ingredients and mix well.
4. Store in the refrigerator and use as required.

How to proceed

1. Boil the potatoes and cut into halves. Leave aside to cool.
2. Combine the potatoes, peas and lettuce in a serving bowl. Add the salad and dressing and toss well.
3. Refrigerate for about half an hour.
4. Serve chilled.

Preparation Time : 10 mins.
Cooking Time : Nil.
Serves : 4 People.
