Ingredients
1 big Onion
2 big Tomatoes
2 Medium Sized Green Chillies
½ tsp Mustard Seeds
½ tsp Urad Dal
¼ tsp Turmeric
2 Cardamoms
2 tbsp Oil
Few curry leaves
Salt to taste.
Method :
1.Peel the onion and finely chop it into long thin slices.
2.Take a blender and add the tomatoes and green chillies. Blend it into a fine paste.
3.Take a frying pan and pour the oil. Bring to heat, when the oil is very hot, add the mustard seeds and let them crackle.
4.Add the cardamoms, urad dal and sauté till it turns golden brown add the curry leaves and sauté briefly.
5.Now put the onions and sauté till they turn dark brown.
6.Pour in the tomato paste and stir well. Add the turmeric and salt to taste.
7.Simmer and cook till the oil begins to leave the edges of the vessel. This may take a while and so keep stirring.
8.The paste will thicken after ten to twelve minutes. Don’t add any water. If desired you can add a pinch of sugar too.
This dish is perfect for journeys and picnics as it won’t get spoilt.
